Tortilla Soup

A few posts ago, I was talking about our "go to" recipes when it begins to get cool this time of year.  The first was pumpkin bread and here's the second:

 

Tortilla Soup
 
Ingredients:
 
4 Tbsp. butter
1/2 c. oil
1 onion, chopped
6 celery stalks, chopped
4 carrots, chopped
1 pound chicken breasts, diced
4 cloves garlic, chopped
2 tsp. cumin
2 tsp. chili powder
2 tsp. salt
2 tsp. lemon pepper
1/2 c. flour
1 14 oz. diced tomatoes
42 oz. chicken broth
tortilla chips 
 
toppings:
 
grated cheese 
sour cream
green onions
cilantro
avocado 
 
Directions:
 
1. Melt butter in large soup pot.  Add oil.
2. Add chopped vegetables and chicken.  Saute'.
3. Add spices and flour. Stir.
4. Add tomatoes and chicken broth.  Simmer one hour.
5. Spoon over crumbled tortilla chips and garnish with toppings.
